To save money during the week I always pack my own lunch. I have really been loving big salads topped with anything. Lately I have been buying a huge pack of organic spinach for $1.99 at Publix and using it all week for lunch salads.
Deli meat is the easiest way for me to pack protien. I just break the slices into smaller pieces and use them in the salad. Today I added walnuts, leftover brie and fresh blackberries (on sale this week for $2.50 at Publix).
I haven’t eaten it yet… only 9:30 now- but I can’t wait to give it a try!
Roast Beef, Brie, Blackberry and Walnut Salad
- A handful of spinach
- 3 slices of deli roast beef
- 5 slices of brie
- 6 big blackberries
- small handful of walnuts
- balsamic vinegar and oil for dressing
