Can you believe we are getting ready for back to school season? I can’t. The summer break has flown by too fast. Get ready for dinner with this easy dinner recipe for cheesy chicken casserole. I picked up all the ingredients at Walmart to make this easy and super affordable!
My grandmother passed down a delicious recipe for duck and wild rice casserole. Over the years I’ve changed it a bit. Now I have a ton of fun changing it up all the time.
This time I added salsa, swapped out the duck for chicken, and used a lot of cheese! I love how using Pace® with its genuine Southwest flavor allows me to skip dicing onions and tomatoes. The same goes for the Swanson® Premium Chicken. It’s great to skip cooking and cutting chicken for a casserole.
I’m a huge fan of easy recipes, no matter the time of year, but it’s imperative to have them during the school year, right? There is no way I can conquer a complicated recipe and get the kids to bed at a reasonable time. That’s why I know you’ll love this recipe as much as I do. No kids? I picked up an extra can of Campbell’s® SpaghettiOs® pasta just in case the kids didn’t enjoy the casserole. It’s always good to have this on hand since the kids love the signature sweet sauce!

- 1 can of Swanson® Premium Chicken
- 1 can of Campbell’s® Condensed Cheddar Cheese Soup
- 1/2 C. of Pace®
- 1 C. of water
- 2/4 C. uncooked white rice
- 1/2 C. pepper jack cheese
- 1 C. of frozen broccoli
- Heat the oven to 375 degrees.
- Mix all ingredients together in a large bowl.
- Grease a casserole dish and pour mixture into the dish.
- Cover dish and cook for an hour or until the rice is tender. Top with extra cheese if desired.
