Forget about guacamole recipes that call for lots of ingredients. This authentic Baja guacamole recipe is simple with only 4 ingredients. Don’t judge it by it’s lack of ingredients. The fresh flavors make up for it because they perfectly blend together for amazing flavor.
This is another recipe I picked up from the cooking class that I took at the Hacienda Encantada during my press trip to Cabo. This cooking class made me realize that I should always take cooking classes on vacation. It ended up being the highlight of my trip. I learned how to make Baja fish tacos and pico de gallo too!
I always loved to make fresh guacamole, but I’ve seemed to complicate it in the past. It never seemed super simple until I found this recipe.
All you need is 4 avocados, 1/2 white onion, 1/2 bunch of cilantro and the juice of one lime. I like to make the pico de gallo at the same time so I can use up the other half of the onion and cilantro. I also like to add the pico de gallo to my guacamole for a little extra flair.
Start by slicing the avocados and taking out the seeds.
Dice the onion and finely chop the cilantro next.
Mash the avocados in a big bowl. It would be great if you had an authentic bowl and mortar and pestle, but I find that a potato masher works just fine.
Once you have it the consistency you like, add the onions and cilantro.
Stir and add in pico de gallo if you like tomatoes in your guacamole. Here’s the full printable recipe:
Ingredients
- 4 avocados
- 1/2 white onion diced
- 1/2 bunch of cilantro finely chopped
- 1 lime
- salt
Instructions
- Mash the avocados
- Add in the onion and cilantro
- Squeeze the lime juice in and mix together well
- Add salt to taste
