Apple Slice Cookies: Easy and Healthy Snack

Are you looking for an easy and healthy snack? If so, you’ll love these apple slice cookies. These “cookies” are perfect for kids and adults and they pack in a lot of protein. It’s the perfect sweet and salty snack!

My boys are always hungry, yet they never seem to want to eat healthy food. They will tell me all day, every day that they are hungry but as soon as I put a healthy meal in front of them they are all of a sudden full!

For years I made fun of moms who would trick their kids into eating healthy foods. I just knew that if I consistently fed my kids healthy food, they would grow to love it. So far, that’s not happening in my house. That’s why I’ve finally caved and started making food fun for the kids.  One of our household favorites for the kids (and the adults) is this super simple recipe for apple slice cookies.

Apple Slice Cookies: Easy and Healthy Afternoon Snack

It’s ridiculously simple to make these apple slice cookies. Start with a couple apples.

Slice them into circles and make sure to take out the seeds.

Then add your favorite toppings. I love to use peanut butter, chia seeds, coconut flakes, and honey.

Apples that don’t brown

For this particular recipe, I used Opal apples. These apples don’t brown!

Opal apples are non-GMO apples that naturally resist oxidation. This makes them the perfect apple for cutting up and setting out for a snack or a party. I like to cut them up and munch on them with cheese while I play games with the kids in the afternoon.

    Apples that don’t brown sound too good to be true. My son will not go anywhere near an apple that has the slightest bit of brown on it! Even if I cut it only minutes before! These look delish!

      My kids too! Seriously though, I didn’t believe the apples would keep from browning either. It’s like magic, but all natural!
