Happy, happy Friday! I hope you have had a great week and are ready to celebrate the weekend. I know I am! I’m ready for a fun weekend. We will be celebrating Father’s Day on Saturday with a cookout at my MIL’s house, then on Sunday we will continue the celebration for Tom. Still need gift ideas? Successes
Apricot glazed barbeque chicken recipe
On Saturday Tom took out all the jelly/ jam/ preserves from our fridge. Turns out we had 4 different jars! One of them was half of a jar of apricot preserves left over from when my friend, Mandy, moved to San Diego. We miss you, Mandy! She had brought over all her food that she would have had to toss for the move. I love that she thought of me and Food Waste Friday!
Anyway, Tom wanted to toss the preserves, but I knew I could do something with it. He doubted me which made me say, “challenge accepted”. He loved the apricot glazed chicken even though he isn’t a big apricot fan! Success.
I’m trying out a new recipe format through Yummly. It is like Pinterest for only recipes. I love looking up other recipes. If you like this one please “Yum” it!
Ingredients
- 4 chicken breasts
- 1 1/2 C. apricot preserves
- 2 T. Dijon mustard
- 1/2 C. barbeque sauce
Instructions
- Mix preserves, mustard and barbeque sauce in a small bowl.
- Place chicken in crock pot.
- Pour sauce over chicken and cook on high for 3-4 hours or on low 6-7 hours.
- Serve over rice.

Sweets
I have had some bad stomach issues this week. I added dairy back to my diet at the same time that I pinched a nerve. I was taking a ton of Advil to alleviate the pinched nerve pain, so much so that I think my stomach was a little raw from so much ibuprofen. Mix in the dairy and my tummy has not been happy. Or I could have gotten a stomach bug. Who knows! What I do know is that these sweets looked awful. I opted for veggies instead of sweets with week.
Mango
We went to happy hour at a friend’s house last week and they sent us home with a mango from their yard. One week later we had a bunch of flies in the house. Turns out I forgot about the mango. The flies had made their home in it. Gross!
Kale lunch
I had some wilted kale that I tried to salvage in this egg and kale dish. Way too much kale! I ended up picking out all the kale and just eating the eggs.
