Happy Tuesday. Today seems like a great day to share a recipe. I put this together a while back and have been waiting for the right time to share it. Since I’m trying desperately to get back into cooking and meal planning I figured today would be the perfect day to share this recipe with you.
It’s also a good time to think about finding my blog voice/ online presence voice/ blogging identity. Thanks again for all the support on my post about full time blogging. I’ve been all over the place with this blog. I started out years ago, very casual, by blogging about my own relationship with money. Then I attempted to go towards a “helpful” template, magazine type articles if you will. I wrote with SEO in mind and it helped me reach a larger audience. Even though writing with SEO in mind helped, I’m going to go back to writing for myself (read more here if you missed my post about it). This being said, you’ll probably notice that I’m changing the way I write. I’ll be experimenting with my “online presence” for a while!
Taking pictures of food and DIY projects is one of my favorite parts of blogging, with the exception of wine reviews. I’m so glad to bring that back this week, tomorrow to be exact! I think I’ll change my blog format to random musings about my relationship with money, with the occasional recipe/ DIY project thrown in.
Since I love taking pictures of food, here is a new recipe I whipped up during Jackson’s newborn days. It’s no secret that I’m a bit obsessed with banana bread. Something about whipping up a batch of banana bread from scratch makes me feel accomplished. Seriously, I could do nothing all day, but once I make muffins from scratch I feel like I’ve accomplished so much. It’s a pretty good feeling with a delicious reward. This was so easy that I was able to make it during nap time just a week after Jackson was born. Too bad Jackson doesn’t sleep like that anymore! I miss those days of constant napping.
These muffins are perfect for a quick breakfast or an on the go snack. My mom gobbled them up while she was visiting! They were definitely a crowd pleaser.
Banana Nut Bread Muffins
Prep Time: 20 minutes
Cook Time: 30 minutes

Ingredients (serves 24)
- 1/2 C. coconut oil
- 3/4 C. brown sugar
- 2 C. mashed bananas
- 2 eggs
- 1/2 tsp. vanilla extract
- 1/2 C. vanilla almond milk
- 2 C. flour
- 1 C. oats
- 1/2 tsp. baking soda
- 2 tbsp. cinnamon
- 1/2 C. chopped pecans
Instructions
Preheat oven to 350 degrees and line a muffin tin with liners.
In a large bowl beat the coconut oil and sugar. Add bananas, eggs, vanilla and milk. Mix well.
In a medium bowl mix flour, oats, baking soda, cinnamon and pecans.
Add dry ingredients to the wet and mix well.
Spoon mixture into muffin liners 3/4 full.
Bake for 30 minutes or until golden brown on top.
