Banana pancakes + Food Waste Friday 1/15

I’m on a food waste free high right now and want to keep it going.  We had a week of zero food waste!  Every now and then I get into a pretty good groove and it’s fun to keep the momentum.  I know that there will soon be busy days with two kids in the house so I’m trying to enjoy these last few months of careful meal planning and little to no food waste.  Please remind me of these successes in a few months when I’m feeling down!

Every Friday I link up with The Frugal Girl and/ or Simply Being Mum for Food Waste Friday. I’ve been environmentally conscious about food waste since I was in college and this is a great way for me to keep tabs on what we waste in our house.

Here is how we did:


1.

Banana Pancakes

3 ingredient banana pancakes

Tom’s uncle dropped off two bunches of local grown bananas.  If you’ve ever had a locally grown apple banana, then you’ll understand how much I love these things.  They have a buttery taste to them and are way better than store bought bananas.  I never trash these guys when I have them on hand.  However, we had a bunch of bananas!  I was able to freeze half of them for smoothies, eat a few, and then use the rest in this 3 ingredient banana pancake recipe that my friend, Mary, gave me.

3 Ingredient Banana Pancakes

In a blender or food processor mix 2 bananas, 4 eggs and 1/4 tsp of baking powder.  Cook over medium high heat, just like a regular pancake.

To be fair, we did waste two eggs since I let Robert help me make these.  The picture above is the aftermath.  Is it considered waste if it is a learning opportunity?

Of course, I can’t follow directions, and my bananas were tiny.  I doubled it, added extra bananas, added 1 tsp of vanilla and a few sprinkles of cinnamon.  They turned out really well.  We topped ours with a fruit sauce made from frozen fruit and water that was boiled down to make a glaze.  I don’t really think you can mess up this recipe too much.  It was a fun way to use up our bananas!

The finished product was great.  Thanks for teaching me how to do this, Mary!  Mary is very much into healthy eating and fitness.  She and Tom eat very similarly so I’m constantly racking her brain for low carb or carb free recipes that are delicious.  She hasn’t failed me yet!

We are still trying to eat our way through all those clementines (10 pounds!).  I finally gave in and peeled the ones we had left and froze them.  The just don’t taste fresh anymore.  I figure I’ll use them in smoothies and try to make an orange creamsicle smoothie next week.

This is what it looks like today.  Nothing special.  I made some mac and cheese for Robert that is in the pot on the bottom.  This was a good reminder to finish that up this weekend.
