- 2 Chicken breasts (or however many people you plan to feed)
- 2 cups of diced pineapple
- 1/4 bottle of BBQ sauce
- 1/4 cup of chicken broth
Combine all ingredients in a crock pot and cook on high for 4 hours. Serve over rice.
I cooked this on a Sunday, cooled it and then put it in the fridge for us to eat on Monday. Mondays are my busiest work days so this turned out to be a pretty handy meal. I need to do crock pot meals more often!
This is great right now because we have been able to buy pineapples every week for $3 and less! Not an expensive meal at all!
