Impress the kids this year with these easy St. Patrick’s Day cupcakes. A simple Rolo with gold sprinkles becomes a pot of gold and adds a little luck to these sweet treats.
I don’t bake. Okay, I take that back. I bake, but I don’t bake well. I don’t even enjoy the process of baking. All the exact measuring with no room for experimentation is very stressful.
While I don’t like it, my kids love it. They really get into the measuring and the stirring. And of course, they love the decorating and eating.
Just because I don’t enjoy baking, doesn’t mean I shouldn’t do it, right? I’m with the kids on enjoying the decorating and eating, so I’ve decided to bake more, but I’ll bake my way! Instead of baking from scratch, I’ve decided to give into the world of boxed cake mixes. This is probably the best decision I’ve ever made. Now I can finally enjoy baking without all the stress of screwing up a recipe!
I’ve seen pot of gold cupcakes all over Pinterest lately so I decided to give it a try. I’m so glad I did because it’s so easy!
