If you’re anything like me then you love all things Pioneer Woman. I’ve always wanted to make her olive cheese bread. It’s been on my list for quite some time. While I still haven’t made her original recipe, I have tweaked her olive mix a bit to make a cheesier (if you can image) version that is perfect atop a flatbread.

I’m a little obsessed with olives and flatbread. Mix them together and you’ve got a winning combination. Salty, crispy, and with the cheese, oh so gooey! I can sit down and eat this thing in one sitting. Though I suggest you share with a friend or serve as a party appetizer.

Start by mixing all your ingredients except the flatbread in a mixing bowl.

Warm a flatbread over some butter on medium high heat in a cast iron skillet. Then add several large spoonfuls on top.

How to make a cheesy olive flatbread

Let it melt for a bit and finish it oven in the oven on 300 degrees. It comes out all ooey and gooey.

My favorite part about this recipe is how easy it is. You literally open two packages of Lindsay olives, add butter, mayo and cheese and you’re all set.

Cheesy Olive Flatbread Recipe

Cheesy Olive Flatbread Recipe

Ingredients

  • 1 6 oz can of sliced Lindsay black olives
  • 1 5.75 oz jar of Lindsay Spanish Manzanilla Olives Sliced with Pimiento
  • 1 stick of softened butter
  • 1/2 C. of mayonnaise
  • 1 C. of shredded mozzarella
  • 1/2 C. shredded parmesan
  • 6 flatbreads

Instructions

  1. Mix first 6 ingredients together in a bowl.
  2. Preheat oven to 300 degrees.
  3. Melt 1 tbsp of butter over medium high heat in a skillet.
  4. Once butter has melted, place one flatbread in skillet and heat for 2 minutes.
  5. Flip flatbread and add 1/4 C. or more of the olive mixture onto the flatbread.
  6. Transfer to oven for 10 minutes or until cheese is completely melted.
  7. Let cool for 3 minutes before you slice and serve.
  8. Repeat with the other flatbreads.
