Day 10 of the 365 day challenge: make my own frozen burritos instead of buying them
I have a weakness for the frozen Amy’s Organic burritos. At one point I was buying 2-3 a week. The cheapest I can get them here are $2.50 a pop. I hated spending $5-7 a week on lunches I could make for less.
In order to save a little money at the grocery store I started making my own frozen burritos.. It costs less than $10 for me to make 10 each week. I send 5 with my hubby to work and I keep 5 for myself. I am sure I will get tired of them soon, but so far I am really enjoying these quick and easy lunches. I pop them in the microwave for 2 minutes on one side and 30 seconds on the other.
DIY Frozen Burritos
Package of frozen corn
Package of frozen rice
Can of Rotel or other diced tomatoes
Can of refried beans
Cup of black beans (or 1 can)
Burrito sized tortillas (10)
Mix all ingredients except the tortillas in a large mixing bowl.
Put two heaping spoonfuls in the center of each tortilla, wrap them up and cover in foil and freeze.
I prefer to use frozen rice and corn because the burritos end up a better consistency since most of the filling is previously frozen. However, I have used fresh corn and boiled rice and they work well too. You could add meat and cheese if you like. The only ingredient that I have found to be key is the refried beans, it acts as the glue to keep the burrito together, so don’t skip it!
