Back to school breakfasts used to be my favorite thing about going back to school. That is until I had three kids. These days, the panic of back to school meals starts setting in halfway through the summer. That’s why I’m a little obsessed with finding easy back to school breakfast ideas like this breakfast skillet.
The reason I love a good breakfast is because I have strong memories of eating a hot breakfast every morning with my family. Growing up, breakfast was my favorite meal. I loved that my mom put so much time and effort into breakfast. We always had a hot breakfast. If I ate cereal it was because I thought it was a treat, not because she was too busy to make breakfast.
With three kids 5 and under, I just can’t get motivated to make a hot breakfast every morning. My kids end up with cold breakfasts much more often than I’d like to admit. Gone are the days of me waking up early to make frittatas and breakfast skillets for me and the hubby. But I miss those days so much and I yearn for them.
That’s why I’m a huge fan of Jimmy Dean® products. Tom and I have been eating the frittatas for years and recently got into the skillets too. It’s such an easy way to put a hot breakfast on the table. It’s pretty cost effective too. The skillets cost about as much as it would cost to buy all the ingredients. You know I like a good deal so I’m always trying to figure out if convenience food is worth the price.
The easiest back to school breakfast ever
For years I would talk smack about people who relied on convenience food. Then I had three kids. I often feel like life is a constant carousel of me opening my mouth and inserting my foot.
Lucky for me, convenience food has come a long way in just a few years. I feel good about serving my family the Jimmy Dean breakfasts because the ingredients are simple.
I’m also a fan of how great the veggies hold up in the freezer. I’ve never been a fan of reheated peppers, but somehow this Jimmy Dean breakfast executes it well.
All you have to do is warm up the contents of the skillet,
beat 6 eggs and add them to the skillet,
and cook until done.
This was the easiest breakfast I’ve made in ages.
There is such satisfaction about making a hot breakfast that the whole family can enjoy together before rushing out for a busy day.
