January is National Soup Month and it couldn’t come at a better time. We have cold weather all the way down in Southwest Florida! To heat up, I’ve been making a lot of soup. One of my new favorites is this super easy loaded potato soup.
All my regular readers know that I don’t have a ton of time to devote to dinner prep, and I know many of you don’t either! The Instant Pot has helped me a ton with quick and easy meals, but sometimes I don’t even have the time to prep a 30 minute dinner. I know you know how I feel!

I served a bowl of it to my husband and he said it tasted like it was from a restaurant! Seriously, these soups give you slow cooked taste in only 5 minutes of cooking time. The reason it’s so good is because you get real, red Idaho® potatoes with flavorful seasonings and rich cheeses. It’s kind of crazy to think that all you have to do is add water!

I could eat this soup all day. Actually, I did eat it all day over the weekend. I had it for lunch, then went back and ate the rest of it as my afternoon snack. It’s that good. You’d never know it came from a bag!
