My favorite thing about my recent trip to Cabo was the cooking class I took. During the class the chef taught us how to make authentic Baja pico de gallo. This is by far the best pico de gallo recipe you will ever find because the fresh flavors meld together perfectly.
For years I’ve been too lazy to make my own salsas and pico de gallo. I couponed for a long time so jarred salsa was something I always had on hand. I’ve always appreciated homemade salsa and preferred it over the jarred stuff, but with small kids at home I haven’t had much time to make salsa or pico from scratch.
Then I saw just how easy it is to make pico de gallo. Here’s a quick demo from the cooking course I took during my hosted press trip to the Hacienda Encantada.
I still can’t get over how easy the chef made it look. The good news is that he didn’t just make it look easy, it actually is easy! I love the way he finely chops the cilantro. It makes all the difference in my cooking now.
For this easy pico de gallo recipe all you need is 6 roma tomatoes, 1/2 of a white onion, 1/2 a standard bunch of cilantro and 1 lime. There are avocados featured here because I like to use the other half of the onion and cilantro to make guacamole. Recipe for that coming soon!
Finely chop the onion, tomatoes, and cilantro. Squeeze the lime juice on top and you’re ready to eat a delicious pico de gallo appetizer or put it on your favorite Mexican inspired dish.
I recently paired this with pork carnitas tostadas. OMG, they were amazing.
This pico de gallo recipe would be a great way to impress guests for Cinco de Mayo celebrations. Here’s the printable recipe:
Ingredients
- 6 roma tomatoes
- 1/2 white onion
- 1/2 bunch of cilantro
- 1 lime
- salt
Instructions
- Dice the tomatoes and onions.
- Finely chop the cilantro (stem and all)
- Mix it all together and squeeze the lime juice on top
- Add salt to taste
