It’s pretty easy! You start with a few glazed donuts and an ice cream cake. I used half of a Blue Bunny® Bunny Tracks Ice Cream Cakes. I’m loving these ice cream cakes because they are the perfect size and price. Mine was only $10.97 at Walmart.
Cut your donuts in half very gently if they are soft and fresh. They should be! Who wants a stale donut?
A Donut Ice Cream Sandwich is the Perfect Use of Leftover Ice Cream Cake
When we serve ice cream cake at parties, we always have leftovers. If you freeze the cake quick enough this is the perfect way to use up a leftover ice cream cake.
Don’t have any left over? Slice an ice cream cake in half and then make another 1 inch slice all the way through. Or keep reading to see how easy it is to do with a scoop of ice cream.
Layer the three slices on top of a donut half and cover with the other half.
Top with chocolate sauce and sprinkles to give it a little flair.

While I love using leftover ice cream cake to make these donut ice cream sandwiches, sometimes you don’t have any leftovers!
In those cases, take two large scoops of your favorite ice cream, sandwich them between a fresh donut and then top with sprinkles or any other of your favorite toppings.
