Happy Earth Day week! Did you do anything exciting for Earth Day? I wrote a little post about why you should care about food waste. Check it out if you didn’t read it earlier this week! I really wanted to have zero food waste this week, but that didn’t happen. We were close though! I think we did pretty well, especially with me being in my last week of pregnancy.
It’s time for another edition of Food Waste Friday. Every Friday I link up with The Frugal Girl and/ or Simply Being Mum for Food Waste Friday. I’ve been environmentally conscious about food waste since I was in college and this is a great way for me to keep tabs on what we waste in our house.

Here is how we did this week:
Food Waste Successes
1. used leftover chicken to make soup
Last week I made the mistake of throwing out chicken that could have been used in soup. Many of you pointed out that I should have souped it up. Great suggestion! I was inspired this week and it turned out great.
I finally made the crock pot chicken tacos from Daily Momtivity. OMG, they are sooo good! We had just enough left to make a simple chicken tortilla soup. All I did was add a can of beans and a can of water. It didn’t need anything else! Robert and Tom were both impressed. I can’t wait to make more soups from leftover meats.
2. saved burnt toast
I have a very bad habit of burning toast. Since I hate to throw it away, I always manage to salvage it. Here is my before image.
After a little scraping with a butter knife I was able to get a much better piece of toast.
3. moving “leftovers”
A good friend just moved to San Diego. The day she left she stopped by for one last play date and dropped off all her food that wasn’t eaten before the move. We got two big bags full of groceries! It was fitting because she dropped them off last Friday and we were all able to discuss Food Waste Friday. I love talking about decreasing our food waste!
We already miss Mandy and Coral! Play dates aren’t the same without them.

3. forgotten leftovers
I mixed two different leftovers together and meant to eat it for lunch early this week. Somehow I forgot about it. By the time I found it, it was dried up and smelled funky. I’m sad because it would have been good. It was curried chick peas and white rice.

Great job Hannah! I love it when friends give us the food that they don’t want too! It’s great that your friend thought to pass it all on to you instead of throwing it away.
I spent Earth Day watching the last of my new Energy-Star certified windows being installed. I was supposed to be planting my 2 new nectarine trees in the afternoon but I spent that time moving furniture back in place and then I was pooped so it didn’t happen :(
I posted my own Food Waste Friday post and I was all excited because we had minimum waste but I just realized that I should amend it because I forgot about that now wayy past its sell-by date half gallon of milk that’s in the very back of my fridge (never did make buttermilk pie) and the pudding cups that I had made with it that I don’t think my son ever ate. I should check all of those. Also, I had to compost some collard greens that I harvested 2 days ago with the goal of cooking them but then I didn’t.
Hopefully next Friday you’ll have your baby in your arms!
I hope I have a baby by next Sunday. We are ready!
