Happy Friday! Life has been pretty busy around here with a newborn. Jackson turned two weeks old yesterday. Time is flying by. Here is one of my favorite pictures I’ve taken so far.
I sure do love these boys! Jackson already has his first cold which means our nights are even worse than they would be with a healthy newborn. I’m utterly exhausted. That being said, I’m somewhat impressed with how little we’ve wasted this week. My mom is still here and I think that helps with food waste. One more mouth to feed equals a little less food waste!
Every Friday I link up with The Frugal Girl and/ or Simply Being Mum for Food Waste Friday. I’ve been environmentally conscious about food waste since I was in college and this is a great way for me to keep tabs on what we waste in our house.
Here is how we did this week:
Food Waste Successes
1. Fruit salad
We received an Edible Arrangement and I had so much fun eating it up before it went bad. We had a bunch of fruit in the house this week and it was perfect for my constant snacking. I mixed up the Edible Arrangement with my other fruit and it was perfect! No fruit wasted!
2. Banana nut bread muffins
I can’t wait to share this new recipe with you in a couple of weeks. We had some moldy bananas that were perfectly fine on the inside.
I was able to salvage them and whip up these beauties:
Food Waste Losses
I’m not eating dairy. Robert eats very little dairy. Because of this, we tend to waste a lot of cheese. I was pretty upset to see that this had gotten moldy and needed to be tossed.
4. Beet hummus
I thought we would experiment with this beet hummus from Trader Joe’s.
Turns out it wasn’t our favorite. We quickly forgot about it and it got a little moldy. Whoops! Lesson learned: stick with regular hummus.
