Every Friday I link up with The Frugal Girl and/ or Simply Being Mum for Food Waste Friday. I’ve been environmentally conscious about food waste since I was in college and this is a great way for me to keep tabs on what we waste in our house.
Seeds of Change Curry Meal
When I got sick, I knew I’d have to figure out a way to save our veggies for a later meal. I’m so glad these lasted!
This was the easiest meal prep ever which was just what I needed after being sick. I put the last of three frozen chicken tenderloins, left over ground chicken, and carrots in the crock pot with half a jar of the curry. I let that cook on low for 4 hours and then added the rest of the veggies. I roasted the butternut squash first so I could cut off the skin easily (thanks for the tip, Mandy!).
We served it over rice and it was a success. Even Robert had a few bites!
I got this jar free from Smiley360 and I have to say I love it. It’s not as spicy as competitor brands even though we bought the spiciest jar. It is way better than the curry from Trader Joe’s and you know how much I love TJ’s! We tested the rice too and I was not a fan. I’ll go into more detail on that later. I’ll stick to food waste for this post.
I think I’ll always try to hold onto our leftover veggies for curry. The mix of carrots, zucchini, cauliflower and butternut squash went really well together. It goes to show that you can throw most combinations in the crock pot with a good sauce and you’ll get something tasty!
threw out pepperonis
This was my only true waste of the week. At the time I threw them out I thought they were the culprit behind my vomiting. I was convinced I had food poisoning and even more convinced I had listeria and my unborn child was suffering. Turns out it was just a bug. A nasty bug that I passed onto Robert. Whoops. I guess I should have held onto these pepperonis.
I still haven’t cleaned my fridge since I announced I was going to start doing this weekly. I guess I’m full of broken promises. I’ll get to it eventually. In the meantime I have been doing a visual inspection every week and that is how I “clean” out the food that needs to be consumed.
This week I am very concerned about the half empty container of cupcake frosting. I’m not a huge frosting fan so my frosting tends to last for two batches of cupcakes. Looks like we will have to make cupcakes soon as I’d hate to waste half a container of frosting. I’ll make more cupcakes for the sake of no food waste. Just call me the cupcake martyr.
We have a ton of food in the fridge because I’m throwing a House Party cheese party for the Super Bowl. I can’t wait! Parties are always an excuse for me to use up all the snacks in our house. It’s not that I serve food that is going bad, but I do serve strange combinations of crackers. I like to think of it as eclectic.
