Craving ranch dressing, but don’t want all the calories? Then you’ll love this lightened-up avocado ranch dressing recipe. Not only is it simple, but it packs a lot of nutrients with avocado and Greek yogurt.
I’m a huge fan of making my own dressings. Before I had kids, I always made my dressings from scratch. These days, I’m lucky if I can mix oil and vinegar together to make a dressing. But when my sister was visiting and said she loved ranch dressing, I knew I had to put something special together for her. I forgot how much I loved doing this, and just how easy it is.
While I love mayonnaise, I’m not a big fan of using it in dressings. When I eat a salad, I don’t want mayo. I want my salad light and as guilt free as possible. That’s why this dressing is made with Greek yogurt instead. It still has buttermilk though. I can’t go completely guilt free!
See those croutons on the salad? Well, they aren’t actually croutons at all. Since I’m trying to be a bit healthier, I swapped the croutons for Somersaults, a crunchy, nutrient dense snack made from sunflower seeds. These things are so good!
Even my kids like them. Jackson, the kid who eats everything, especially loved them in the avocado ranch dressing. He sits on my lap and helped me eat it. Robert, the picky child, prefers the chocolate flavored ones. Who can blame him? I’m just happy that they are getting protein, fiber, vitamin E, and healthy fats in the form of a snack. To make it even better they are non-GMO, vegan, and nut-free. Somersaults come in the following flavors: Sea Salt, Salt & Pepper, Cinnamon, and Dutch Cocoa.
I love that these snacks are so versatile. The sea salt flavor is great on salads, and the other flavors are perfect for snacking. We’ve also been packing them for snacks on the go. They make great travel snacks because they don’t fall apart or leave lots of crumbs. Toss a few raisins and dates in with them and you have a healthy trail mix!
I can’t get over how well the Somersaults held up in this creamy salad dressing. No soggy croutons here! I even ate them in leftover salad the next day and they still held up to the dressing. This is perfect for packing a salad for lunch.
I know you’ll love this avocado ranch dressing as much as I do, so here is the recipe. Enjoy!
