Once upon a time I was given a beautiful stainless steel Kitchen Aid mixer. It sat in my kitchen for 3 years untouched. During our first big move I decided it was time to get rid of it since I’m a big believer that if you don’t use it, you don’t need it. Now that I don’t have it, I find myself wanting to make cookies every single week. This isn’t a huge problem for me since most of my cookies do fine without the mixer, except for when I want to make sugar cookies. Turns out, a mixer is listed in almost every recipe I’ve seen for sugar cookies. A couple of weeks ago I had a craving for homemade sugar cookies and knew I had to find a way to make sugar cookies without a mixer.
A solid Google search led me to a blog post by Food52 on how to cream butter and sugar by hand.
I decided it was worth a shot and this is what I got from my first time baking sugar cookies.
They held their shape and everything! They even looked good iced. Keep in mind that this was my first time EVER icing cookies. They aren’t Pinterest worthy, but I think they turned out really well for someone who has no baking skills or equipment.
Did I mention that I don’t even have a rolling pin? I used a bottle of scotch instead!
It was so much fun for me to use things around my house such as the bottle of scotch and to cream the butter and sugar by hand. I’ve mentioned before that we have zero extra space in our kitchen. Some of our kitchen appliances are in my closet and the linen closet. Normally I’d be wishing for the day that we have a bigger kitchen with more storage space. Instead, this experience made me realize that I don’t need a bigger kitchen or all the fancy appliances to enjoy myself in the kitchen. I’m doing pretty well without all the extra stuff right now!
