Stop paying for Chinese take-out! Next time you’re craving fried rice, make this easy pineapple pork fried rice recipe.
This one meal dish couldn’t be easier to make. There are two things you can do the day before to make prep even easier. First thing I do is make the rice the day before. If you didn’t already know, day old cold rice is best for making fried rice. If you don’t have the time, at least let your rice cool on a baking sheet in the fridge for 30 minutes.
My rice cooks really quickly because I’m a huge fan of Minute® Rice, is a great pantry staple that’s ready and fluffy in 5 minutes. I stick to white rice for this recipe, but you have options with Whole Grain Brown Rice, White Rice and Multi-Grain Medley.
The next thing I do is make the fried rice seasoning.
I like to keep a big batch of this around. Here’s what goes into it:
1/4 C. garlic powder
4 tsp. ginger
2 tsp. sugar
2 tsp. salt
1 tsp. pepper
1 tsp. red pepper flakes
Mix it all together and keep on hand for all your Chinese inspired meals.
Next, you can get to cooking!
Cook the pork, onion, and pineapple in a cast iron skillet. I use canned Dole® Pineapple Tidbits because they are already the perfect size for this dish. Less chopping makes this busy mama happy.
Then start your fried rice in a wok. Once the eggs are cooked and the veggies are soft, you can add it all together to infuse the flavors with a few tablespoons of Kikkoman® Traditionally Brewed Soy Sauce. It’s adds the perfect umami taste that rounds out the flavors of the dish.
Plate it with some green onions and toasted sesame seeds and you’re ready to eat. The meal comes together in less than 30 minutes!
The meal is so easy because of my tried and true ingredients.
I’m able to find all three of these easily in Publix. No searching at all!

Ingredients
- 4 Tbsp. sesame oil (use vegetable oil if needed)
- 1 white onion, chopped
- 1 C. frozen pea and carrot mix
- 1 C. diced ham
- 1 can Dole Pineapple Tidbits
- 4 C. cooked cold white Minute Rice
- 2 Tbsp. butter
- 2 eggs
- 2 Tbsp. Kikkoman soy sauce
- 2 Tbsp. fried rice seasoning (recipe at top of post), or a packaged seasoning
Instructions
- Heat 2 Tbsp. of the sesame oil in a skillet over medium heat.
- Add onion, ham and pineapple. Cook until onions are translucent and ham has browned. Set aside
- In a wok, heat 2 more Tbsp. sesame oil over medium heat. Add rice and stir occasionally for 5 minutes or until rice starts to brown.
- Make a well in the rice and add butter. Once melted, add eggs and scramble. Mix into the rice.
- Add frozen vegetables, meat mixture, soy sauce and fried rice seasoning. Stir and cook for 3 minutes to infuse flavors.
