Time for another edition of Food Waste Friday.
I’m overjoyed to report that we had no waste this week! I don’t even understand how that happened. I have to admit that we do indeed throw out a few scraps here and there, mostly from Robert’s plate. But for the most part we clean our plates to pack it up for later.
I’ve been environmentally conscious about food waste since I was in college, and this is a great way for me to keep tabs on what we waste in our house. Every Friday I blog about the food we wasted. Learn more about ways to decrease food waste in this post and this post.
Sometimes I’m motivated enough to share a recipe. Today is one of those days! This isn’t my own recipe, it’s one that a friend sent to me from another blog. It’s Robin’s Super-Healthy Lentil Soup. Click on that link to get the recipe. I loved it, but Tom was not a fan. I followed all the directions except I used the roasted tomato sauce from last week instead of diced tomatoes. I was really happy that I didn’t have to throw those tomatoes out.
Robert had a play date on a rainy day. Since the park was out of the question, we made dairy/egg free + whole wheat pancakes instead. I think there is a reason most pancakes call for dairy and white flour. These were not as tasty as we had hoped. Luckily, Robert loves everything with syrup so I tossed them in the freezer for quick breakfasts this week.
I was prepared to toss out this salad. It had been in the fridge for a very long time. I just knew it would be slimy and gross. Turns out my storage containers actually keep things fresh! It’s on the menu for dinner tonight.
