Spicy Chipotle Beef Tacos with Chipotle Sauce

This meal was amazing and it made 6 servings.  I love making tex-mex dishes because I feel like anything goes!  Best part:  It cost me about $10 to make this meal that lasted for 6 meals!  $1.67 per serving.

Spicy Chipotle Beef Tacos with Chipotle Sauce

  • ~1 lb of roasting beef (I used chuck roast, chicken or pork would work too).
  • 1 can of chipotle chile peppers in abodo sauce
  • juice of whole lime
  • salt and pepper
  • 1 cup of greek yogurt
  • black beans- I made mine from dried beans with garlic (will post more later)
  • rice- we used brown rice
  • tomato, avocado, and lettuce for toppings
  • Taco shells

Place your meat in the crock pot and pour the lime juice over the meat.

If you want it really spice go ahead and leave the seeds in the peppers, otherwise take the seeds out of the peppers (you may want gloves).

Put the entire can of chipotle peppers in a food processor and blend until the peppers are liquefied.

Take out 3/4th of the sauce and pour it over the meat in the crock pot.  Cook for 5 hours on high.

Chipotle Sauce:

Add the Greek yogurt to the food processor and pulse until completely mixed.

The Greek yogurt sauce can be stored for later use, if you store it properly in the fridge you can keep it for ~3 days (it makes a great alternative to chipotle mayo).

We had a side of rice and beans plus some pretty nice toppings:

The night I made this I thought I had to work late and wouldn’t be able to sit down for dinner with Tom until 8:30.  We have always eaten together, so I hate to eat separately… it is my favorite part of the day.  So I decided to eat a 5:00 snack before I headed to work at 6.  This made for a pretty nice burrito bowl:

We ate it this way for our second night too!  Overall this was a great meal and I would do it again.  We kept the seeds in so it was super spicy!  But we are fans of the heat :)

    YUM! This looks great! Tex mex is my favourite… cheap tex mex=even better!
