This steak chimichurri salad uses garlic and Mazola Corn Oil for a simple marinade. We baked the steak so that we didn’t have to fuss with a grill. Plus, it’s easy to clean up! Even though salads may sound healthier, it is easy to make them just as bad for you like a burger is when you add creamy dressings and too many toppings. We made three swaps to make sure that our salad was better-for-us. We skipped a creamy dressing and opted for oil and vinegar. We also used a low-fat cheese instead of a full-fat version, and we used a mix of spinach and lettuce to boost the greens in our dish. Plus, we skipped other oils and just used Mazola Corn Oil.

To get started with your recipe, gather all your ingredients. We used Mazola Corn Oil, a steak filet, grape tomatoes and croutons (we had them on hand already), and fat-free cheese. To make our sauce, we needed garlic, parsley, cilantro, red wine vinegar, oregano, lemon juice, salt, and pepper. By making this sauce, it really elevated this recipe and made it perfect for dinnertime.
Simple Steak Salad With Chimichurri Sauce
Ingredients
For the salad:
- 2 steak filets
- 1 package grape tomatoes
- 1 package pre-washed mixed greens including spinach
- 1/2 cup low-fat cheese
- 1 package croutons
For the steak marinade
- 1/2 cup Mazola Corn Oil
- 2 tbsp minced garlic
For the chimichurri sauce:
- 1/4 cup parsley leaves
- 4 garlic cloves
- 1/2 cup Mazola Corn Oil
- 1/4 cup red wine vinegar
- 1/2 tsp salt + pepper
- 1/4 cup cilantro
- 1/2 tsp lemon juice
- 1 tsp oregano
Instructions
- Prepare the steak by marinating it as desired in the corn oil and garlic.
- Bake in a 400-degree pre-heated oven until desired doneness. I like mine medium and it takes only about 8 minutes.
- Make the sauce by combining all of the chimichurri sauce ingredients in a food processor or blender until combined.
- When the steak is baking, prepare your salad with greens, tomatoes, croutons, cheese, and your favorite salad toppings.
- When the steak is baked, remove from oven and slice into strips.
- Top with the sauce and add to your salad. Enjoy!
