What started as a one time pizza night experiment has turned into a weekly ritual. Many different kinds of pizza are made in our house on Thursdays, but it never fails that one is always jalapeño cheddar. It’s that good. This jalapeño cheddar pizza recipe not only tastes amazing, but it simplifies my grocery shopping by utilizing foods leftover from Taco Tuesday. Suddenly, tomatoes, Tillamook Extra Sharp White Cheddar Cheese Loaf , and jalapeños are transformed from a Mexican themed dinner to a spicy Italian pizza.
Food waste is a big deal in my household
Many years from now I imagine my kids sitting around and talking about their childhood. Inevitably one of them will remark on how crazy mom was about not wasting food. I will consider that a compliment, not an insult. It’s true, I spend much of my time thinking of ways to avoid food waste in my house.
One way I avoid food waste is to buy less food and utilize the same ingredients in new meals throughout the week. My current favorite food waste hack is to use my leftover Taco Tuesday ingredients on Pizza Thursday.
One block of Tillamook Cheese gets us through the week
Being an eco-friendly foodie isn’t always easy. For years I would buy so many different cheeses for different meals, only to have them go to waste when they would go bad before I actually consumed them. I would love to be the type of person who always has a well stocked cheese drawer. You know, one with a good aged cheddar, goat cheese, blue cheese, brie, gouda, pepper jack; you get the drift.
A well stocked cheese drawer will probably be in the cards for me one day, but for now, while I’m firmly stuck in the kid-friendly-meals phase of my life, a good aged cheddar is what gets me through the week– Tillamook Extra Sharp White Cheddar to be exact.
I love it because the quality of the cheese is perfect for a foodie like me, while the flavors are delicious enough for my kids to learn to love a good cheddar. It is ideal for tacos, pizza, and general snacking. In fact, that is one reason I buy a block as opposed to shredded. I love having it around for snacking!

Oh, yeah, I guess you actually want that right about now, right? I once read a comment on someone’s blog about how annoying it is to read the story leading up to the recipe. So, if you are like that person and just jumped to the recipe, here is a quick recap- I buy at least one block of Tillamook Sharp Cheddar Cheese each week to get us through Taco Tuesday, Pizza Thursday, and general cheese snacking. I support Tillamook because I think they have practice some sweet eco-friendly dairy farming methods and they produce delicious dairy. Win-win.

Here’s the step by step for making jalapeño cheddar pizza:
Prepare your favorite pizza dough or buy one pre-made. I switch it up each week, but really love the pizza dough from Chez Panizze that I found in Fanny Singer’s book Always Home. I’m also a fan of using my sourdough discard to make pizza dough!
Prep your toppings. For pizza night, I always prepare a wide variety of toppings for the kids. Slice up the jalapeños and grate or slice your Tillamook cheese. I slice mine and crumble it on top of my pizza.
Brush your pizza with olive oil, then add your pizza sauce. I currently make my sauce from one can of tomato paste mixed with 1 C. of water, a crushed garlic clove, and a generous amount of oregano.
Start piling on the toppings! Use as little or as much of the jalapeños and Tillamook Cheddar Cheese as you like. I like to add bacon too.
Bake on 450 for 10-15 minutes or until crust is golden brown.Without further ado, here is the printable recipe for the most delicious jalapeño cheddar pizza.

Should you cook the bacon before using it as a topping?
Yes! Sometimes we even use leftover bacon (that is rarely a thing in our house). Sorry I didn’t specify in the recipe. I’ll do that. Thanks!
