Creamy Broccoli Stalk & Potato Soup

Don't toss the broccoli stalk! Use it in a soup. This creamy dairy free soup is flavorful and healthy.

Ingredients

  • 2 large broccoli stalks woody layers and ends removed
  • 2 baking potatos 2 large ones or 3 small ones
  • 3 cloves of garlic
  • 5 C beef bone broth
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions

  1. Cut potatoes and broccoli into 1-2 inch pieces

  2. Steam or boil potatoes, broccoli, and garlic until tender

  3. Discard water, cover the vegetables with broth and bring to a boil.

  4. Once at boiling, bring back to simmer and let sit for 5 minutes.

  5. Add olive oil

  6. Blend with an immersion blender or in a blender.

  7. salt and pepper to taste

Recipe Notes

Feel free to manipulate this recipe to your liking. Change the broth type, use a head of roasted garlic, throw in the broccoli crowns if you want.

The point of a recipe like this is not to create stress, but to show you that you can make something delicious from a less loved part of food.

Use what you have on hand. If you have less potatoes that is fine! All you really need to do is make sure the liquid covers the top of the vegetables before blending. You can add more broth if you prefer a more liquid soup.
